Ingredients
- 1 8 oz pkg - frozen onions and peppers blend
- 2 medium - celery stalks, chopped
- 4 medium - garlic cloves, minced or pressed
- 1/2 28 oz can - whole tomatoes, chopped
- 1 15 oz can (or about 2 cups) - navy beans, drained and rinsed
- 1 16 oz pkg - frozen zucchini and yellow squash
- 3 - bay leaves
- 1 1/2 Tbs - Cajun seasoning (we used McCormick Perfect Pinch Cajun Seasoning)
- 4 cups - cooked brown rice
