- 100g (4oz) chorizo, finely sliced (halved and quartered, if large)
- 2 garlic cloves, crushed
- 1 large onion, thinly sliced
- 1 red pepper, halved, seeded and thinly sliced
- 1 yellow pepper, halved, seeded and thinly sliced
- 1 red chilli, seeded and finely chopped
- 1 tsp caster sugar
- ½ teaspoon cumin seeds
- 400g (14oz) can chopped tomatoes
- 4 large eggs
- Sea salt and freshly ground black pepper
- Chopped fresh flat-leaf parsley, to garnish
- Ciabatta bread, to serve
