Ingredients
- 1 Lebanese cucumber (unpeeled, seeded and cut into 1cm pieces)
- 2 large ripe nectarines (cut into 1cm pieces)
- 4 green onions (sliced) and 8 cherry tomatoes (cut into quarters)
- Add 1 lime (peeled and segmented, removing any white pith)
- 2 sprigs coriander (chopped)
- 2 sprigs mint (chopped)
- 1 small red chilli (very finely chopped)
- 1 tsp fish sauce (exclude or replace with soy for vegetarians)
- 1 tsp lime juice
