Fragrant Fish Stew
Ingredients
- 1 tablespoon olive oil
- 1 shallot, minced
- 1/2 leek, cut in half lengthwise and sliced thinly
- 2 cloves garlic, minced
- 1/2 bulb fennel, diced
- 1 teaspoon salt
- 1/3 cup white wine
- 1/8 teaspoon saffron, dissolved in 2 tablespoons water
- 1/4 teaspoon smoked paprika
- 1 pinch cayenne
- 1 14-ounce can crushed tomatoes
- 2/3 pound flounder or other white fish, cut into 2-inch pieces
- 1 pinch freshly ground pepper
- 2 tablespoons parsley, chopped
- 2 teaspoons red wine vinegar
- 6-8 ounces spaghetti
