Ingredients
- 1 c bacon fat/oil/butter
- 1 c flour
- 1 large green bell pepper, diced
- 1/2 large white onion, diced
- 1 stalk celery, diced
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, cut into 1" chunks (you can use thighs if you like.)
- 3 qt chicken stock
- 1/2 tsp thyme
- 1 heaping tsp creole seasoning
- 1/4 tsp ground black pepper
- 2 cloves garlic, minced
- 3 bay leaves
- 2 tsp gumbo file powder
- 1 tbsp sugar
- 2 tbsp worchestershire sauce
- 2 tbsp apple cider or red wine vinegar
- 1/2 tsp cayenne pepper (optional)
