- 1 pound turkey sausage ground beef, chicken, or chorizo can be substituted
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces enchilada sauce
- 4-6 medium-sized corn tortillas I used low carb
- 1 14.5-ounce can black beans, rinsed and drained
- 1 14.5-ounce can diced tomatoes, UNdrained
- 2 cups Cheddar Colby cheese blend
- 4-8 eggs
- 3 green onions chopped for garnish, if desired
- ½ cup chopped cilantro for garnish if desired
