Farmer McGregors Revenge
Ingredients
- 1 Peter Rabbit - cut in 8
- 2 cups carrot juice
- 2 large cloves garlic - thinly sliced
- 1 tablespoon salt (plus more)
- 2 tablespoons fresh thyme leaves
- several sprigs of fresh thyme
- ground pepper
- 2 cups peeled sliced carrots (1/4 inch - the organic ones really are better)
- 1 big leek - cleaned and sliced - white and light green only
- 1 cup flour
- 1 cup dry white wine
- 1 cup chicken broth
- 1/4 cup dry vermouth
- 4-5 bay leafs
- 1 BIG scoop duck fat, enough to generaously coat your pan. I think I used about 1/3 cup
