- 1 medium green bell pepper, diced
- 3 ribs celery, diced
- 3 cloves garlic, minced
- 6 cups smoked turkey stock*
- 1/2 teaspoon each Kosher salt and black pepper
- 1 teaspoon creaole seasoning
- 1/8 - 1/4 teaspoon cayenne
- 2 bay leaves
- 3 cups chopped smoked turkey
- For Serving:
- ½ tablespoon gumbo filé powder
- ¼ cup chopped parsley
- ¼ cup chopped green onion tops
- 2 cups hot cooked rice
