- 2 lbs smoked sausage , cut into 1/4 inch pieces
- 2 -3 green peppers, chopped
- 1 red pepper, chopped
- 2 onions, chopped
- 4 stalks celery, diced
- 2 (14 1/2 oz) cans tomatoes seasoned with basil garlic & oregano
- 10 oz tomato paste
- 2 (14 oz) cans beef broth
- 2 tbsp dried parsley
- 1 tbsp dried basil leaves
- 1 tsp dried oregano leaves
- 1 tsp cayenne pepper
- 2 tsp tabasco sauce (optional)
- 2 lbs cooked shrimp, shelled
- 6 cups brown rice, cooked regular
