Ingredients
- 2 tsp canola oil
- 6 ounces andouille sausage
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 green belle pepper, seeds removed and chopped
- 2 garlic cloves, minced
- 1 cup uncooked wild rice
- 1 cup water
- 1/4 tsp red pepper flakes
- 6 sprigs fresh thyme
- 14 ounce can lower sodium chicken broth
- 14 ounce can fire roasted tomatoes
- 1 cup shredded chicken (rotisserie chicken works great!)
