- 1 small yellow onion, finely chopped
- 1 Tbs. chopped fresh thyme
- 2 carrots, finely chopped
- 2 lb. russet potatoes, peeled and cut into chunks
- 2 Tbs. unsalted butter
- 3 cups shredded braised brisket (see related recipe at left)
- 3/4 cup frozen baby peas, thawed
- 3/4 cup milk or half and half
- Salt and freshly ground pepper, to taste
