Easy Lowfat Cajun Jambalaya Recipe
Ingredients
- 1lb boneless skinless chicken breasts
- 1lb of raw shrimp, peeled and deveined, tails removed
- 1lb large bay scallops
- 28oz can of diced, stewed tomatoes (save juice)
- 4tbsp minced garlic
- 1 bottle of clam juice (i think it's 8oz)
- 4tbsp cajun seasoning
- 2 bell peppers (i use green, yellow, and red for color)
- 1 med onion
- 1lb spinach linguini (or pasta of your choice) or
- 4cups basmati rice
