- 1 tablespoon coconut oil
- 1 tablespoon toasted sesame oil
- 1 teaspoon freshly grated ginger
- 3 cloves garlic minced
- 1/4 cup soy sauce
- 1 teaspoon Thai red curry paste
- 1 tablespoon freshly squeezed lime juice
- 2 tablespoons rice vinegar
- 1 tablespoon miso
- 3 tablespoons coconut sugar or dark brown sugar
- 2 medium zucchini spiralized (or julienned)
- 1 bunch bok choy sliced
- 2 cups fresh sugar snap peas
