- 1⁄4 cup olive oil, divided
- 2 tablespoons creole seasoning, divided
- 2 tablespoons tamari or 2 tablespoons soy sauce
- 1 1⁄2 cups onions
- 1 cup celery, diced
- 1 cup green pepper, destemmed, deseeded, and diced
- 1 cup red pepper, destemmed, deseeded, and diced
- 1 jalapeno, destemmed, deseeded, and diced
- 1 1⁄2 cups basmati rice, rinsed (or other white rice)
- 2 tablespoons garlic, minced
- 2 cups vegetable stock or 2 cups water
- 2 cups tomatoes, deseeded, and diced (or 1 - 14 oz. can diced tomatoes)
- 1 bay leaf
- 1 teaspoon salt
- 1 (15 ounce) can red beans, drained, and rinsed
- 1⁄2 cup green onion, thinly sliced
- 1⁄4 cup freshly chopped parsley
