- 4 chicken thighs (bones and skin removed)
- 1 cup diced andouille sausage (or more, to your taste)
- 4 Tbsp. melted butter, plus enough vegetable oil to make a half cup total
- 1/2 Cup all-purpose flour
- 1 cup coarsely chopped onion
- 1 cup coarsely chopped bell pepper
- 1 cup coarsely chopped celery
- 4 cups chicken stock (home made or purchased)
- 1 cup sliced okra (fresh or frozen)
- 2 bay leaves
- 1/2 Tbsp. cajun seasoning
- 1 tsp. paprika
- 1/4 tsp. cayenne
- salt, to taste
- 2 tsp. filé powder
