- 1 cup vegetable oil, divided
- 1 pound smoked andouille sausage, cut in 1 inch pieces
- 1 1/3 cups all-purpose flour
- 1 large white onion, finely chopped
- 1 large green bell pepper, finely chopped
- 1 jalapeno pepper, seeded and chopped
- 2 stalks celery, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon kosher salt
- 6 cups chicken stock
- 2 bay leaves
- 1 teaspoon black pepper
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons hot sauce, or to taste
- 2 teaspoons chopped fresh thyme (1/2 teaspoon if using dried)
- 1 pound sliced okra
