- 1 lb medium to large shrimp - shelled & deveined
- 1 lb sliced okra
- 1/4 cup vegetable oil
- 1/4 cup plus 2 tbsp flour
- 1 1/4 cup finely chopped onion
- 4 cloves garlic
- 1 large red pepper - cored
- 3/4 cup finely chopped celery
- 6 cups stock made from shrimp shells or chicken broth
- 2 bay leaves
- 1 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp bay or creole seasoning
- 1 tsp kosher salt
- 2 tsp black pepper
- 2 tbsp worcestershire
- 1-2 tsp tabasco
- 2 cups corn kernels
- 5 cups cooked rice
