Ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lime juice (lemon juice or your favorite vinegar would also work)
- 1 tablespoon maple syrup (honey works, too)
- 1/4 teaspoon Dijon mustard
- Sea salt and freshly ground black pepper, to taste
- For the salad:
- 6 quail eggs
- Half a head of curly green lettuce, separated into leaves
- 6 small beets (about 3/4 pound total), roasted, peeled, halved, and sliced*
- 1 cup sugar snap peas, roughly chopped
- 1 cup strawberries, hulled and sliced
- 3-4 ounces goat cheese, crumbled
- Sea salt and freshly ground black pepper, to taste
