Ingredients

- 5 large leaves of kale, removed from the stems
- 4 ounces diced mushrooms (I used a mix of shiitake and cremini mushrooms)
- 1/2 cup grated Parmesan-Reggiano
- 1 cup grated low-moisture mozzarella, plus more for topping
- 3 ounces cream cheese, softened
- 1/4 teaspoon red pepper flakes
- Salt to taste (about 1/2 teaspoon)
- Tortilla chips or slices of bread for serving
