- 1 medium butternut squash, peeled, seeded, and cut into small cubes
- olive oil
- 3 tablespoon red wine vinegar
- 1 tablespoon Balsamic vinegar
- 3 tablespoon raisins (preferably golden)
- 1 yellow onion, chopped
- 1 fennel bulb, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon maple syrup
- 1 14 oz. can of chopped tomatoes
- 3 tablespoon heaping, chopped green olives
- 3 tablespoon capers (rinsed if of the salt packed variety)
- salt and pepper
