- 2 tablespoons cornstarch
- Kosher salt
- 1 1/2 pounds broccoli crowns, trimmed and cut into florets with 1-inch stems (about 8 cups)
- 2 medium carrots, peeled and sliced 1/2 inch thick on the bias
- 2 teaspoons soy sauce
- 1 teaspoon sugar
- 1 teaspoon Shaoxing rice wine or dry sherry
- 1/4 teaspoon toasted sesame oil
- 1 tablespoon fermented black beans or douchi, rinsed and minced
- 1 teaspoon grated fresh ginger
- 1 clove garlic, grated
