Ingredients
- 2 Tbsp. butter
- 1/4 cup flour
- 2 large russet potatoes, diced into 1/2 inch cubes
- 1/2 onion, diced
- 2 celery stalks, diced
- 2 large carrots, diced
- 1 cup broccoli florets, roughly chopped
- 1 cup cauliflower florets, roughly chopped
- 1 cup green beans, chopped
- 2 cups frozen corn, thawed
- 4-5 cups chicken stock
- 1 cup milk
- salt and pepper
- 1/2 tsp. fresh thyme
- 1 cup sharp cheddar cheese, shredded
