Ingredients
- 8 ounces bacon, diced
- 1/2 cup thinly sliced leeks, white and light green parts only
- 1/2 cup finely chopped yellow onion
- 1/2 cup finely chopped celery
- 1 quart bottled clam juice
- 1 quart fish stock
- 2 medium russet potatoes, peeled and finely chopped
- 8 ounces mixed firm fish (such as halibut and sturgeon) and scallops, cut into bite-sized pieces
- 8 ounces shrimp, peeled, deveined and cut into bite-sized pieces
- 1 pound fresh clams, shells scrubbed
- 1 pound mussels, scrubbed and debearded
- 1/4 cup heavy whipping cream
- Salt and freshly ground black pepper
- 3 tablespoons finely chopped fresh tarragon
