- 1 tablespoon curry powder
- 1/2 cup nonfat plain yogurt
- 1 (2-inch) piece ginger, peeled and finely chopped
- 1 large red onion, cut into small wedges
- 5 cups chopped fresh vegetables, such as cauliflower, carrots or green beans
- 1/2 cup chopped roasted cashews, divided
- 2 to 3 cloves garlic, chopped
- 2/3 cup water
- 1 cup basmati rice, rinsed until water runs clear then drained
- 1 cup frozen peas
- Salt and pepper to taste
- 1 tablespoon canola oil
