Ingredients
- 1.5 pounds Chicken, cut in small bites ; (I use a cooked rotissere chicken from the store)
- 1/4 clove Garlic, minced
- 1 medium Onion
- 2 cubes Chicken Bouillon
- 1 cup Hot water
- 1/2 teaspoon Ground Cumin
- 2 cups Half-and-half cream, or milk
- 2 cups Monterey jack cheese, shredded
- 1 can Creamed Corn
- 1 can Diced green chiles
- 1 medium Tomato, chopped
- 1 bunch Fresh cilantro
- Salt and pepper, to taste
