Ingredients
- 2 tablespoons extra-virgin olive oil
- 1/2 yellow onion, diced
- 2 small garlic cloves, minced
- 4 sprigs fresh thyme, leaves only
- 2 tablespoons all-purpose flour
- 2 1/2 cups chicken stock, preferably homemade
- 1 1/2 cups half & half
- 1 starchy potato (I used a Russet)
- 3 ears corn
- 2 tablespoons kosher salt
- Fresh ground pepper to taste
- 1/4 cup chopped fresh parsley leaves
- 1 tablespoon unsalted butter
