Ingredients
- 1 1/2 lbs of salmon
- 1 can of coconut milk
- 3 cups of chicken stock
- 1 1/2 lb of Yukon gold potatoes
- 1 yellow onions
- 1 leek, up to the green part
- 4 carrots, diced
- 1 package mushrooms (earthier the better)
- 1 can of diced tomatoes
- 1 tbsp each oregano, parsley and thyme
- 2 tsp each cayenne, salt & pepper, divided
- 3 bay leaves
- 2 tbsp canola oil & butter
