- 1 4-5 pound chicken, cut into drums, wings, thighs and breasts (halved)
- 10 peppercorns
- 2 whole allspice berries
- 2 bay leaves
- 8 cups low-sodium chicken broth
- 1 medium onion, chopped
- 4 medium carrots, sliced into 1/2" thick pieces
- 3 stalks celery, sliced into 1/2" thick pieces
- 1 tablespoon butter
- 8 ounces crimini or button mushrooms, stemmed and sliced
- 8 ounces egg noodles, cooked to al dente
- salt and pepper to taste
- fresh parsley for garnish
