- 1/2 tsp salt
- 1/2 Tbs whole wheat pastry flour (or regular whole wheat flour)
- 1 1/2 - 2 pounds of asparagus, trimmed
- olive oil cooking spray

- 1 lemon, zested and cut into wedges
- 3 cups water
- 3/4 cup dry instant grits, plain
- 1/2 tsp salt
- 2/3 cup extra sharp cheddar cheese, shredded
- 1 lb jumbo shrimp (medium works too and is often cheaper), peeled and deveined
- 1/4 cup chopped green onions (greens only)
- 1/4 cup low-fat milk
