Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1 small carrot, chopped
- 2 garlic cloves, chopped
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon ground cumin
- 1⁄8 teaspoon saffron threads or 1⁄8 teaspoon turmeric
- 1 (14 1/2 ounce) can diced tomatoes, with their juices
- 2 cups vegetable stock
- 1 small red bell pepper, seeded and chopped
- 8 ounces green beans, ends trimmed and cut into 1-inch lengths
- 1 (15 ounce) can chickpeas, drained and rinsed
- salt, to taste
- pepper, greshly ground if possible, to taste
- 1 cup brown rice or 1 cup white rice, cooked
- 3⁄4 cup salsa, of your choice
- 1⁄2 cup frozen peas, thawed
- 1⁄3 cup sliced pimento stuffed olive, drained
