Creamy Roasted Beet Soup
Ingredients
- 8 or 9 medium beets – a little over two pounds
- 1 tbsp. extra virgin olive oil
- 1 pint heavy whipping cream
- 1/2 cup vegetable stock
- salt and fresh ground black pepper
- 2 tablespoons creme fraiche or to taste
- fresh grated horseradish or snipped chives as garnish – optional
