- 1 lb shrimp, raw, peeled and deveined
- 1/2 cup lime juice, squeezed from 6–7 limes
- 1/2 tsp kosher salt
- 1 cup cucumber, seeded and diced (about 1 medium cucumber)
- 1/2 cup tomato, diced
- 1/4 cup red onion, finely diced
- 2 Tbsp cilantro, chopped
- 1 jalapeño, seeded and finely minced (if desired)
- 1/3 cup tomato juice
- 2 tsp hot sauce
- salt and pepper, to taste
- 1 pinch granulated sugar, if desired
