Cremini Mushroom Barley Soup
Ingredients
- 2 large shallots, diced
- 2 slices bacon, chopped
- 3 garlic cloves, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon cumin
- 1 teaspoon chopped fresh thyme leaves
- 1/4 teaspoon smoked paprika
- 1 quart mushroom stock
- 1 quart chicken stock (or double up the mushroom)
- 1 bay leaf
- 1/2 cup pearl barley, rinsed well
- 2 carrots, peeled and diced
- 1 lb cremini mushrooms, quartered
- 1 15oz can white beans, drained and rinsed
- 1 teaspoon salt
