Ingredients
- 2 tsp sesame oil
- 1 tsp olive oil
- 2 small red bell peppers, diced (about 1 1/2 cup)

- 1 Tbsp grated ginger (or paste)
- 1/2 Tbsp minced garlic (about 2–3 cloves)
- 4 scallions, washed and chopped, plus one for garnish
- 2 eggs, beaten
- 1 1/4 lb small shrimp, peeled and deveined
- 1/2 cup frozen peas
- 5 cups cooked quinoa (1 1/2 cup uncooked quinoa prepared ahead of time)
- 1/3 cup soy sauce (plus more to taste)
- 1/2–1 tsp sriracha (optional)
