- 1 medium onion, diced
- 2 medium green chili peppers, seeded diced very fine
- 1 medium green bell pepper, seeded and diced fine
- 1/2 medium red bell pepper, seeded and diced fine
- 1-2 medium jalapeno pepper, seeded and diced fine
- 1 stalk celery, diced

- 5 Tbsp chili powder
- few dash(es) hot sauce (like tabasco or texas pete)
- 2 tsp ground black pepper
- 2 tsp salt
- 2-3 c water
- 1 c shredded cheddar cheese (to top)
