- 1 small eggplant, peeled and diced
- 2 medium zucchini, unpeeled, rinsed and diced
- 2 medium yellow summer squash, unpeeled, rinsed and diced
- 2 medium tomatoes, diced, all juices retained
- 2 tablespoons white wine or chicken or vegetable broth
- 1 cup sliced okra, optional
- 1 teaspoon kosher salt, or to taste
- 1/4 teaspoon freshly cracked black pepper
- 1/4 teaspoon Creole or Cajun seasoning, or to taste, optional
- 2 tablespoons torn fresh basil
- 2 tablespoons chopped fresh parsley
