Ingredients
- 1/2 cup dried lentils
- 1/2 cup rice or barley (if not gluten intolerant)
- 1 tbsp olive oil
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1/2 cup chopped green pepper
- 1 garlic clove, minced
- 5 cups chicken or vegetable broth
- 1/2 tsp basil
- 1/4 tsp oregano
- 1/4 tsp rosemary
- 1/4 tsp pepper
- 1 1/2 cups cooked chicken (1/2 pound), chopped (I baked 3 chicken breasts in the oven at 350 for 25 minutes)
- 1 15 oz can diced tomatoes
