- 3 tbsp rice vinegar
- 1 tbsp hot sesame oil
- 2 tsp honey
- 12oz soba noodles cooked as directed, drained and cooled
- 3 green onions, sliced
- 1 roasted red bell pepper, diced
- 1/2 cucumber, diced
- 1 medium carrot, shredded
- 1/2 small bunch cilantro, chopped
- 1/4 cup dry roasted peanuts, chopped or lightly toasted sesame seeds (optional)
