Ingredients
- 2 Tbsp coconut oil
- 1 medium yellow onion chopped
- 1 tsp salt
- 3/4 tsp black pepper
- 2 lbs beef stew meat tenderized or steak cut into chunks
- 2 boxes beef broth or stock approx. 32 ounces each
- 2 cans tomato juice approx. 5.5 ounces each
- 2 cans diced tomatoes approx 14.5 ounces each
- 2 large potatoes cut in bite sized pieces
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 4 c mixed vegetables I use frozen
