Ingredients
- 10 oz macaroni or shell pasta, cooked according to instructions on package
- 1 tsp flavorless oil
- 2 shallots
- 1/3 cup diced white onion
- 1/4 cup peeled and diced carrots
- 1 cup skinned and diced yellow potato (Yukon or Dutch Cream)
- 3/4 cup water
- 1/3 cup raw cashews, soaked 5 hours (longer if your food processor isn't the best)
- 1 clove garlic, minced
- 1 tsp salt
- 1/4 tsp black ground pepper
- 1 Tbsp lemon juice
- 2 Tbsp nutritional yeast
- 1/3 cup almond milk, unsweetened
