Ingredients
- 3 medium zucchini, washed and ends trimmed
- 1 large chicken breast, cut into 1" inch chunks
- salt
- black pepper
- 3 teaspoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon fresh ginger, minced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup snow peas, ends trimmed
- 1 cup thinly sliced bok choy
- 1/2 cup thinly sliced carrots
- 1/4 cup chopped fresh cilantro, for garnish
- sesame seeds
- 1/4 cup of cold water
- 1 teaspoon corn starch
- 2 tablespoons low sodium soy sauce or Tamari
- 1 1/2 tablespoons oyster flavored sauce*
- 1 teaspoon brown sugar or honey
- 1 teaspoon of fish sauce (optional but highly recommended for the umami flavor)
- 1 teaspoon of Mirin, rice wine or dry sherry
- 1/2 - 1 teaspoon of chili garlic paste, red pepper chili flakes or Sriracha sauce - optional or to taste
