- 5-6 medium-sized yukon gold potatoes, sliced 1/4" thick

- 1/2 cup dried pinto beans OR 1 can cooked pintos
- 2 tablespoons whole grain mustard
- kosher salt, to taste
- freshly ground black pepper, to taste
- Pinch red pepper flakes
- 1 tablespoon chopped fresh parsley
