Ingredients
- 2 tablespoons Olive Oil
- 2 or 3 cloves of crushed or smashed garlic
- 1 cup or 2 large leeks, white part only - sliced
- 1/4 cup or 2 small shallots, sliced or diced
- 1 cup or (1) pack crimini mushrooms, cleaned and chopped
- 1 cup or (1) pack button mushrooms, cleaned and chopped
- 1 cup dried exotic mushrooms (shitake, porcini, morel, etc) reconstituted
- 2 small potatoes (red will do)
- 4 cups separated - veggie stock (you can use chicken stock if you prefer)
- 1/2 cup White Vermouth
- 2-3 tablespoons flour
- Dash of nutmeg to taste ( 1/4 - 1/2 teaspoon likely)
- Splash white wine vinegar
- 1-2 tablespoons fresh thyme (or more if you like)
- salt and pepper to taste
- Drop of creme fraiche optional
