- 150 gram cucumber for the cups (can be served in ramekins instead)

- 30 milliliter light soy sauce (gluten-free if required)
- 10 gram sesame seeds
- 30 milliliter sesame oil
- 30 milliliter honey
- 30 milliliter lemon juice
- 25 gram chopped shallots
- 10 gram chopped cilantro/coriander
- 10 gram chopped leeks
- 1 piece zest of 1 lemon
- 1 teaspoon togarashi (or chilli) powder
- 1 piece chilli peppers (optional)
