Ingredients
- 2 acorn squashes
- 5 tablespoons olive oil
- 2 tablespoons shallots, finely chopped
- 1 small garlic clove, finely chopped
- 1 pound ground lamb
- 1/4 teaspoon cinnamon
- 1/4 teaspoon dried oregano
- 1 pinch allspice
- 1 leek, white and some green, washed and finely chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup walnuts, toasted and finely chopped
- 4 ounces feta cheese, well crumbled
- 1/4 cup dried dates, finely chopped
- egg, beaten
- 1 pound phyllo dough, thawed at room temperature
- olive oil for brushing
- salt and pepper to taste
