Sweet Potato Mac Cheese Recipe
Ingredients
- 1 sweet potato, baked about 45 – 60 until soft (I baked mine the night before while cooking the oven was on for something else)
- 3 cups wholewheat macaroni
- 4 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 1 cup cheddar, grated
- 1/2 cup parmesan, grated
- 1 cup frozen peas
- salt and pepper to taste
