Creamy Cauliflower Mac And Cheese
Ingredients
- 1/2 of an onion roughly chopped
- 3-4 cloves of garlic chopped
- 1 tablespoon olive oil
- 1 head of cauliflower cut into florets and steamed
- 1 cup of milk I used 2%
- 5-6 cups of cooked macaroni noodles
- 2 tablespoons of unsalted butter
- 16 oz classic cheddar cheese shredded
- 5 oz Gruyere cheese shredded
- Smoked paprika or regular, optional
- Salt and pepper to taste
