Sweet Potato Mac Cheeze
Ingredients
- * 2 medium sweet potato (about 2 cup cooked)
- * 1 lb dried pasta shell
- * 1/3 c non dairy spread (i use earth balance)
- * 1/3 c flour
- * 2 c unsweetened non dairy milk
- * 3 garlic clove, minced
- * 2 tsp dijon mustard
- * 2 tsp white miso
- * 1/2 tsp cayenne
- * 1 tsp nutmeg
- * 1/2 tsp salt
- * 2 tbsp nutritional yeast
- * 2 c baby spinach, chopped
- * freshly ground pepper to taste
