- 7 1/2 ounces 56 percent cacao chocolate or bittersweet chocolate, roughly chopped
- 1/2 teaspoon kosher salt
- 1 1/2 cups homogenized whole milk
- 1 1/2 cups heavy cream
- Generous 1/3 cup (3 ounces) sugar
- 2 large whole eggs
- 3 egg yolks
- Whipped cream for garnish
- Grated chocolate for garnish
