- 1 pound andouille sausage sliced into rounds
- 2 boneless and skinless chicken breasts cut into 1 inch cubes
- 1 medium sweet onion diced
- 5 cloves garlic minced
- 1 red bell pepper cored and chopped into 1 inch chunks
- 1 green bell pepper cored and chopped into 1 inch chunks
- 2 ribs celery diced
- 2 tablespoons Cajun seasoning
- 1 teaspoon ground paprika
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt or to taste
- 1 1/2 cups long grain white rice uncooked
- 1 14oz can diced tomatoes
- 2 tablespoons hot sauce optional
- 3 cups low sodium chicken broth more if needed
- 1 pound raw large shrimp peeled and deveined
- Chopped fresh parsley for garnish
